Za’atar Roasted Potatoes (Palestinian Style)

In the village, potatoes are a comfort food — baked slowly in olive oil, sprinkled with za’atar, and shared straight from the tray.
Crispy on the outside, tender inside, and bursting with the earthy aroma of Darna Za’atar and Darna Olive Oil.
This recipe takes that same tradition and makes it simple enough for any day of the week.


🍋 Ingredients

Main

  • 2 lbs (900 g) small potatoes (Yukon gold or baby potatoes), halved

  • 3 Tbsp Darna Olive Oil

  • 1 ½ Tbsp Darna Za’atar

  • ½ tsp salt (to taste)

  • ¼ tsp black pepper

  • Optional: ½ tsp chili flakes or sumac for extra brightness

To Finish

  • 1 Tbsp Darna Za’atar (extra for sprinkling after baking)

  • 1 tsp Darna Olive Oil (drizzle)

  • Fresh parsley, chopped

  • Lemon wedges for serving


🔥 Directions

1️⃣ Prep

  1. Preheat oven to 425 °F (220 °C).

  2. Wash and halve the potatoes; pat them dry with a towel (dry potatoes = crispier edges).

2️⃣ Season

  1. In a large bowl, toss potatoes with Darna Olive Oil, Darna Za’atar, salt, and black pepper.

  2. Spread evenly on a baking sheet lined with parchment paper — avoid crowding.

3️⃣ Roast

  • Bake for 30–35 minutes, stirring halfway through, until golden brown and crisp on the edges.

4️⃣ Finish

  1. Remove from oven, sprinkle an extra spoon of Darna Za’atar while hot.

  2. Drizzle with a bit more Darna Olive Oil for shine and flavor.

  3. Scatter fresh parsley and serve warm with lemon wedges.

  • Use plenty of oil. Potatoes love olive oil — it helps the za’atar coat evenly.

  • Don’t skip the post-bake za’atar. It adds that fresh, aromatic kick.

  • For an extra layer, toss the hot potatoes with a spoon of Darna Sumac for tang.

  • Serve alongside roasted chicken, labneh, or your morning manousheh.
