Olive Oil Cake (Palestinian Village Style)

This soft, golden cake captures that spirit: a fragrant, tender crumb infused with Darna Olive Oil and citrus.
It’s simple enough for tea time, yet special enough for guests.

🍋 Ingredients

Dry Ingredients

  • 1 ¾ cups (220 g) all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp salt

Wet Ingredients

  • 3 large eggs

  • ¾ cup (150 g) sugar

  • ¾ cup Darna Olive Oil

  • ½ cup (120 ml) milk (or orange juice for dairy-free version)

  • 2 Tbsp lemon juice or orange juice

  • Zest of 1 lemon or orange

  • 1 tsp vanilla extract

Optional Toppings

  • Powdered sugar (for dusting)

  • Toasted almonds, pistachios, or sesame seeds

  • Spoon of labneh or whipped cream to serve


🥣 Directions

1️⃣ Prep the Oven

  • Preheat to 350 °F (175 °C).

  • Grease and line an 8-inch (20 cm) round or loaf pan with parchment paper.

2️⃣ Mix the Wet Ingredients

  1. In a large bowl, whisk eggs and sugar until pale and slightly thickened.

  2. Slowly whisk in Darna Olive Oil, milk, citrus juice, zest, and vanilla until smooth.

3️⃣ Combine the Dry

  1. In another bowl, whisk flour, baking powder, and salt.

  2. Add dry ingredients to wet in two batches, stirring gently until combined — do not overmix.

4️⃣ Bake

  • Pour batter into the prepared pan.

  • Bake 40–50 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool in pan for 10 minutes, then transfer to a rack.

5️⃣ Finish & Serve

  • Dust with powdered sugar or drizzle a touch more Darna Olive Oil for shine.

  • Serve with tea, coffee, or a dollop of labneh on the side.
